  A DAY IN THE COUNTRY ITINERARY

8:45 AM. We meet at Grand Central Station, NYC—under the clock, having purchased round-trip tickets to Wassaic, NY—and board the train for a 9:10 AM departure.

11:30 AM. Arrive in Wassaic to meet our van and driver for the day. We’ll be whisked off to Chaseholm Farms where all guests, including those driving, will convene at 12:10 PM. There we’ll be greeted by Sarah Chase—one of a handful of female grass dairy farmers today—who runs this third generation owned (350–acre) dairy farm. We’ll meet the herd face-to-face, learn from Sarah what grass-fed dairy really entails and why she’s so passionate about unconfined, regenerative grass farming.

Next, we’ll “follow the milk” to Chaseholm Creamery for a small tour/tasting and lunch of farmstead cheeses—from Nimbus, a delicious triple cream, to nutty-buttery Alpage, a Gruyere style cheese, to Barrett’s Blue, a Roquefort style blue with bite—all made by Sarah’s brother, our host Rory Chase. Before leaving, we make a quick stop at the small Chaseholm Farm store for some souvenirs.

We’re off to Hillrock Estate Distillery, only minutes away. Hillrock is one of a precious few distilleries worldwide operating in the traditional way. We view the process, visit “the malting cathedral” and taste the spirits crafted from their own estate-grown grains. (Hillrock’s master distiller was master distiller at Markers Mark). The Wine Spectator describes Hillrock as the “best single malt whiskey in the United States today.”

5:15 PM. Time to sit down and relax at nearby Stissing House (1794), one of the most authentic charming venues in the Hudson Valley. Owner-hosts, Patricia and chef Jean Michel—formerly of Provence Restaurant in Greenwich Village—will prepare a three-course meal paired with wine to enjoy and savor before we take a twilight drive to catch our 8:15 PM train bound for Grand Central Station.

Sarah and Rory Chase, cousins of Dame Patricia McCann, share more than the family gene and passion for whole food and the good table. Their great grandfather, Alfred W. McCann, was a pure foods advocate, journalist, and radio broadcaster in the ‘20’s. Three generations and 90 years later, the McCann name is still heard on New York radio.
